Zucchini Chocolate Cake

Here is another way to use Zucchini.  This recipe is very moist and even has a vegetable in it, could be close to being vegan.  (Except for the eggs and oil).  Well desert is just that, desert.  Eat it sparingly.  This chocolate cake is really moist and delicious, I think you will enjoy this dish.  My family loves the flavor.

 Zucchini Chocolate Cake

  • 2 cups of flour
  • 2 cups of sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon sale
  • 1 teaspoon ground cinnamon
  • 4 eggs
  • 1   1/2 cups vegetable oil
  • 3 cups grated zucchini
  • 1 cup chopped walnuts

Mix above ingredients.  Pour into a 9×13 greased pan.  Bake at 350 degrees for 55 minutes.

Cool and frost with chocolate icing.  Hersey’s recipe is the best.  4 cups of powdered sugar, 1/2 cup of cocoa, 1.2 cup of milk, 1/2 cup butter, and a teaspoon of vanilla. (or almond flavoring)

    Apple sauce and ground flax seed are very good egg substitutes – and better for you!
